| Factory activity begins with the pine nut in shells, harvested from pine trees grown in the open under the sun of Castile – which gives our pine nuts their top quality. The next step is removing the shells, after grading by sifting or separating. The pine nuts thus leave the milling machine classified by size. The shelled pine nut kernels then pass to the selection phase, first by a modern colour grading machine and then by hand. This is when the traditional "peelers" come in. The product sometimes goes through a new step: washing, a process required for exporting. The finished product is then ready for storage. We use cold storage lockers, kept at the optimum temperature for the product, appropriately palletised. Finally, the pine nuts leave our facilities bottled to the buyers' specifications, in bulk or retail packaging, in bags or glass jars. Throughout this process, we work under a quality system governed by IFS (International Food Standard) standards, which guarantees quality management and food safety. |
